Afternoon tea is one of the most iconic customs from England. Its origins in the enjoyment of tea and light repast among the nobility during the mid-1800s. It eventually grew into a platform for socialisation and produced its own set of etiquette. Starting from the bottom, the three-tier tea stands have sandwiches, scones and then dessert (cake), with proper manners dictating that the food be eaten in rising order. The items are generally eaten with a knife and fork, except for the scones, which are meant to be broken by hand and then topped with clotted cream, strawberry jam, and so on.
Many of afternoon tea services offered at hotels in Japan are quite fancy and come with extras like soup, amuse-bouche, chocolates and champagne. Once it reaches that point, it isn’t so much a light snack between lunch and dinner as a full-course meal. And just like a course meal, it’s meant to be eaten in the order of amuse followed by soup. Quite a few of the cafes that do afternoon tea offer free refills of the accompanying tea, so we recommend having the first cup straight and the second with milk.
